EPIC ONE BOWL SAVOURY MUFFINS
INGREDIENTS
2 cups (300 grams) plain wholemeal (wholewheat) flour
2 teaspoons baking powder
sea salt and pepper, to season
60 grams butter, melted and slightly cooled
½ cup (125 ml) milk
3 eggs
1 medium zucchini, grated
1 medium carrot, grated
1 cup (160 grams) canned corn kernels, drained
1⅓ cups (150 grams) tasty cheese, grated

METHOD
Preheat oven to 180 C and line a 12 hole muffin tin with papers.  Set aside.
Place the flour, baking powder, salt and pepper into a large bowl.  Whisk to combine creating a well in the centre.
Place the butter, milk and eggs into the well of the flour and whisk until just combined.
Gently fold through the zucchini, carrot, corn and cheese.  If your batter looks a little dry (depending on the brand - wholemeal flours can vary slightly and require a tad more liquid) simply add a splash of milk.
Evenly divide the mixture between the prepared tray and bake for 15-18 minutes or until golden and when a skewer inserted removes cleanly.  Allow the muffins to cool for 5-10 minutes before placing on a wire rack to cool completely.  Enjoy x

BANANA BLUEBERRY & COCONUT LOAF
INGREDIENTS
2¼ cups (340 grams) wholemeal (wholewheat) flour
2 teaspoons baking powder
1 teaspoon cinnamon, ground
pinch salt
1 cup (170 grams) brown sugar
⅔ cup (170 ml) sour cream
½ cup (125 grams) butter
1 teaspoon vanilla extract
3 eggs
3 bananas, mashed (approx. 2¼ cups) PLUS 1 banana sliced, to decorate
1 cup (125 grams) blueberries
¾ cup (70 grams) shredded unsweetened coconut
METHOD
Preheat oven to 170 C (350 F) and line a large loaf tin with baking paper. Set aside.
Sift flour, baking powder, salt and cinnamon into a large bowl. Set aside.
Using an electric mixer on medium-high speed, beat brown sugar, sour cream and butter in a large bowl until light and fluffy (approx. 4 minutes). Add vanilla and beat for 1 minute.
Add eggs, one at a time. Beating well after each addition.
Reduce speed to low, add flour mixture and mix until just combined.
Add mashed banana, blueberries and coconut and mix until just combined. 
Pour batter into prepared tin and top with sliced banana. Bake for 1 hour or until a skewer inserted removes cleanly. If your loaf is browning too quickly before cooking through, simply pull the loaf out of the oven, cover with aluminium foil and return to the oven for the remaining cooking time. Allow to loaf to cool for 15 minutes before placing on a wire rack to cool completely. Enjoy x

INGREDIENTS
Pea and Ricotta Fritters:
500 grams fresh (deli style) ricotta
1 cup (150 grams) peas, blanched and slightly crushed
1 cup baby spinach, finely chopped
½ cup mint leaves, finely chopped
½ cup basil leaves, finely chopped
zest of 1 lemon
½ cup (60 grams) grated parmesan
3 eggs
sea salt and pepper, to season
olive oil, to fry in
Tomato Salad:
2 heirloom tomatoes
250 grams heirloom cherry tomatoes
1 roma tomato
half a red onion, thinly sliced
1 cup basil leaves
sea salt and pepper, to season
½ cup (100 grams) store-bought (or home made kale) pesto
METHOD
To make the pea and ricotta fritters:
Place the ricotta, peas, baby spinach, mint, basil, lemon zest, parmesan, eggs, sea salt and pepper into a large bowl. Mix to thoroughly combine. Place a fry pan over medium heat. Add a little olive oil. Take heaped tablespoons of the ricotta mixture, shape into rounds and gently place into the fry pan. Flatten slightly. Cook for 3-4 minutes. Flip and cook for a further 2-3 minutes or until golden and set. Place cooked fritters into a plate lined with kitchen paper. Continue frying until no mixture remains.
To make the tomato salad:
Cut the tomatoes into a variety of shapes (slice, quarter, halve) and arrange on a large wooden board along with the red onion and basil leaves. Season with sea salt and pepper. Drizzle with olive oil and pesto.
Add cooked fritters to the board, top with a drizzle of pesto, basil leaves and grating of parmesan. Serve immediately.

MAKES 30
INGREDIENTS
2 carrots, grated [approx. 2 cups of grated carrot]
1 cup (95 grams) rolled oats
1 cup (125 grams) pecans (nut free version replace pecans with 1 cup oats)
1 cup (100 grams) almond meal (nut free version replace almond meal with 1 cup coconut)
½ cup (30 grams) desiccated coconut PLUS 1 cup (60 grams) to decorate
6 medjool dates, pit removed
⅓ cup (80 mls) coconut oil, melted
¼ cup (60 mls) maple syrup
1 teaspoon vanilla bean paste [or extract]
1 teaspoon cinnamon, ground
½ teaspoon nutmeg, ground
¼ teaspoon mixed spice, ground
¼ teaspoon ginger, ground
METHOD
Place the carrot, oats, pecans, almond meal, coconut, dates, coconut oil, maple syrup, vanilla, cinnamon, nutmeg, mixed spice and ginger into the large bowl of a food processor. Blitz for 1-2 minutes (scraping down the sides of the bowl when necessary) or until smooth. Place the remaining 1 cup of desiccated coconut onto a large plate. Take heaped teaspoons of the mixture and with oiled hands roll into rounds. Roll each ball in coconut to coat. Place in the fridge for 3-4 hours to set. Store in the freezer for up to 3 months. •
